GIFs are a flat image format meaning that all edits are saved into one image layer and cannot be undone. SVG is best used for graphics on the web, while the EPS file format is used for high-quality documents printing and AI is a file format proprietary to Adobe Illustrator.

JPEG's saved at high quality settings (low compression) can be OK for print, file sizes are certainly more sensible.
